1. Okra: 1 lbs
  2. Medium onions: 2
  3. Turmeric powder: 1 tsp
  4. Salt: 1 tsp or to taste
  5. Chili powder to taste
  6. Coriander powder: 1.5 tsp
  7. Cumin powder: 1.5 tsp
  8. Chopped Tomatoes: 2 (optional)
  9. Olive oil or oil of your choice

Preparation (6 servings)

  1. Cut onions julienne style.
  2. Wash the okra and dry with a paper towel or any clean cloth. Cut okra in half, lengthwise.
  3. Fry the okra and set it aside. (Make sure not to over fry).
  4. Add three tablespoons of oil onto a pain. Once oil is heated, add onions and cook until onions turn pink.
  5. Add turmeric powder and stir well.
  6. Add chopped tomatoes and cook for ten minutes.
  7. Add coriander powder and salt followed by fried okra and mix it well.
  8. Cook on medium heat for five to ten minutes.

Enjoy with naan or roti.
