Ingredients
I.Chicken – one small Cornish hen or your choice of chicken
- Oil – olive oil one serving spoon
- Onion – one chopped medium size onion
- Garlic – 3 tablespoons minced
- Ginger – 2 tablespoons minced
- Tomatoes – 3
- Tomato paste – 1 tablespoon
- Coriander powder-1 teaspoon
- Turmeric powder – 1 teaspoon
- Cumin powder – 1 teaspoon
- Garam masala – 1 teaspoon
- Kasturi methi – 2 tablespoons crushed in hand
- Cashews – one cup
Preparation
- Make pure tomatoes in a blender and set them aside.
- Add cashews in a blender with a half cup of water and cream.
- Now add oil to a pan and let it get warm. Add onions, stir fry, and add garlic, ginger, and turmeric powder. Cook on low-medium heat. Add chicken and let cook for 3 minutes.
- Add coriander powder, cumin powder, Garam masala and mix well, and immediately add tomato puree and tomato paste and mix well.
- Add half a cup of water and let the chicken cook. When chicken is well-done, add cashew cream. Mix well until the chicken looks creamy and everything mixes well. In the end, add Kasturi methi. Cook for a few minutes more.
- Enjoy with rice, naan, or pronthas.
