Ingredients
- Olive oil – one tablespoon
- Green beans– half cup
- Carrot– half cup
- Green peas – half cup
- Celery – half cup
- Onion – one small chopped
- Kidney beans– cooked half cup
- White beans– cooked half cup
- Spinach– one cup
- Tomato- 2 ( make puréed )
- Tomato paste – one tablespoon
- Ginger – half teaspoon
- Garlic – half teaspoon
- Vegetable broth – one box 16 oz
- Pasta – half cup
Preparation
- In a pot, heat one tablespoon of oil and add onion.
- Sauté onions for a few minutes.
- Immediately add garlic and ginger. Sauté all together, then immediately add all vegetables except spinach. Sauté then add tomato puree. Let it cook add spinach.
- Then within a few seconds, add vegetable broth with 8 oz of water. Then add pasta. Now add tomato paste.
- Let it cook until everything is mixed and well done. Add lemon and enjoy.
